Best Ways To Cook Venison
Venison can be a tricky meat to cook if you've never cooked it before. You cannot cook venison like you would cook beef, because venison is a leaner meat. For example, if you are cooking beef for X amount of time to make the meat medium rare and you cook venison for the same amount of time you will end up with well done venison. Venison will cook in half the time of beef and this is where some people get meat that comes out over cooked, tough, and/or chewy.
This recipe is a family secret. It took me forever to get my dad to reveil his secrets to me. I never follow this recipe, however I never follow any recipe I use. For me it's a guide that's all. What I love about this recipe is that it's simple, easy, and delicious. Thawing the meat is time consuming, usually I let it sit in the fridge over night and in the morning put it in the slow cooker. This recipe is for shredded venison sandwiches with homemade barbecue sauce.
These sandwiches are moist, delicious, and have a slight sweet and tangy flavor. They are a favorite in my house as they are perfect for any occasion with the capability of be paired with any potato side dish, noodle salad, or casserole.
Recipe:
3lbs boneless chuck roast
1 tbs. sugar
1 tsp. dry mustard
1 tsp. salt
½ tsp. pepper
½ c. vinegar
1 tsp. Worcestershire sauce
1 c. catsup
1 c. water
½ c. brown sugar
Combine ingredients in bowl
Put meat in slow cooker and cover with the sauce
Cover and cook on high till meat is cooked through. Around 10 to 12 hours. I usually put it together and get it in the crock pot by 7 A.M. and it will be ready anywhere from 5 P.M. to 7 P.M.
Venison steaks are another favorite. The key to making these types of steaks is knowing how long to cook them to get the proper tenderness and doneness. Venison has a great flavor, however it can be a bit game-y to some people. Many people will mask the game-y flavor by marinating the meat over night in one of their favorite sauces or marinades.
For our steaks we simple season with Lawrys and a dash of salt and pepper. I absolutely love the taste of venison steaks and feel you lose the great game-y flavor when using marinades. We grill them til medium rare and they are the perfect steaks, tender and juicy.
Trying to cook these steaks to well done will result in dry and tough steaks. Venison steaks are best cooked to medium rare and left on a covered plate to keep warm. Leaving them on the grill too long or to keep warm will also result in dry tough steaks.
The main reason most people do not like venison is because they either don't know how to cook it properly, or they had it from someone who didn't know how to cook it properly. When made the right way, venison is a great meat with delicious flavor. Whether making hamburgers, tacos, stews, or roasts venison is a great lean meat that makes any meal.

The BBQ sandwiches look delicious! I have only cooked ground venison which I used just like hamburger and couldn't really tell the difference. It was given to us by a friend; my husband isn't a big hunter and we have plenty of farm-raised beef so I don't get a chance to use venison much, but still an interesting hub...voted up and useful.
Thanks for the votes katedonavon! True when you use ground venison whether for hamburger, tacos, or whatever people usually can't tell the difference. I grew up on venison so I always prefer venison over beef when given the option:)
